Dundee to St' Andrew
Moving from Dunblane to Dundee, we stopped over at pretty town called Perth, seeing beautiful flowers, rivers, mountains and yummy food stovies. After lunch we walked all the way to the gate of highland. Seeing salmons climbing massive waterfall was impressive.

Next day we headed to St' Andrews where Kate and Prince William met.

Bath
I've been to Bath so many times as work, I walked to royal crescent with my group and decided to stay in the cafe watching movies all day.

Edinburgh to Dunblane
Moving from Edinburgh to Danblane where Andy Murray grew up, it was a pleasant one hour journy by train.
My friend picked me up from Dunblane station, driving around Callander, Loch Lomond and Lock Katrine where Jan lives. Seeing so many mountains and lochs reminded me of Japanese countryside where my Grandparents used to live. NO signal on the phone, only 12 residences around big big loch Katrine, no shop nearby, it takes 40 muinutes by car if you need to get something, 1 hour drive to the closeset pub. If you are ill, the ambulane can't get in because of narrow road, emergency air ambulance has to come and get you. No school in this villege, not a gerat place to bring kid up but something you can feel something warm and refresh mind completely from modern IT life. Local people help each other here, they grow their vegitable, get some eggs from chicken and ducks and exchange all food they need.

Weekend baking - Blackberry and Apple Crumble Cake
For the cake:
♠ 225g butter or margarine at room temperature
♠ 250g golden caster sugar
♠ 3 eggs, whisked
♠ 250g self-raising white flour
♠ 1 teaspoon of baking powder
♠ Good teaspoon of cinnamon (optional)
♠ 3 windfall apples, peeled and finely sliced
♠ 120g blackberries (preferably frozen)
♠ Icing sugar to dredge (optional)
For the crumble topping:
♠45g butter, cubed, at room temperature
♠35g caster sugar
♠70g white flour
- Pre-heat the oven to 180 C / gas mark 4. Grease medium sized roasting tin, around 35cm long (or other sized tin of your choice) or line with baking paper.
- Start by making the crumble topping. Mix all the ingredients for the crumble topping in a bowl with your fingertips until it resembles coarse breadcrumbs. Set to one side.
- To make the cake, cream the butter and sugar together with an electric hand whisk until smooth. Add the eggs gradually using the electric whisk to incorporate. Don't worry if it's curdles a little. Sieve the flour, baking powder and cinnamon into the bowl and use a spatula or metal spoon to fold it into the mixture until well incorporated. Finally fold in the chopped apples and blackberries.
- Pour the mixture into the prepared tin and use the spatula to press blackberry and apple crumble cake mixture into the edges of the tin and spread it flat. Bake for around 60 minutes until a skewer comes out clean and the cake has a slight springy texture. Check it halfway through baking and if the cake is browning before it's cooked through then loosely cover the top of the cake with a layer of foil.
- Leave for around 10 minutes to cool and dredge with icing sugar before serving if you like.

Edinburgh 1
1 hour flight from London Gatwick... Edinburgh, here I am. Scotland is famous for miserable weather but luckily sunny all the way through while I was staying here.
Walking slowly from Edinburgh castle, St Gile's Cathdral, John Knox's house, Scottish Parliament and stopping at the pub for Haggis and Scottish Whisky. Scottish Parliament was designed by famous Spanish alchitect Enric Miralles. Despite of Scottish government spent so much money for this building, it was so ugly.
